A place to gather in downtown Dundee.

Proof was created to be the kind of place we wanted to see on Main Street: welcoming enough for your everyday coffee, special enough for a night out, and comfortable enough that you never feel rushed to leave.

We care about good ingredients, thoughtful hospitality, supporting New York producers, and making as much as we reasonably can right here in our kitchen.

But more than anything, Proof is about creating a place people want to be.

Come for coffee. Stay for lunch. Meet for wine.

We’ll see you at Proof.

Meet the Team:

The Chef, the Baker, and A Local Winemaker

  • A man with a beard, smiling and giving a thumbs-up, standing in a doorway. He is wearing a baseball cap, a black shirt, and a colorful apron. The door leads into a cozy home with artwork visible inside.

    Greg DeForest Campbell

    CO-OWNER

Greg DeForest-Campbell brings a lifetime of restaurant experience, a passion for quality, and a serious talent for making things from scratch to Proof. A Certified Sommelier and lifelong hospitality professional, Greg understands that the best experiences come from thoughtful details, genuine hospitality, and exceptional food and drink.

He’s also a powerhouse in the kitchen and beyond, with a knack for creating the homemade staples that make Proof feel truly its own—from house-made sausage to some of the best breads around. For Greg, craftsmanship matters, whether he’s pouring a glass of wine, welcoming a guest, or working with his hands to make something from scratch.

  • A woman in a floral blazer pouring white wine into a glass at a table with a red patterned tablecloth, with wine bottles and glasses on the table in a warmly decorated dining room.

    Lilly DeForest Campbell

    CO-OWNER

Lilly DeForest-Campbell is a hospitality professional through and through. A lifelong restaurant-industry professional and Certified Sommelier, she has an instinct for making people feel welcomed, cared for, and right at home. Her passion for exceptional service and attention to detail is at the heart of everything she does at Proof.

But Lilly’s talents extend well beyond hospitality. She’s just as comfortable in the kitchen, where she creates the kind of thoughtful, delicious food that makes a place feel special—from pimento cheese to pain au chocolat and perfectly baked Danish. At Proof, Lilly brings her warmth, creativity, and love of great food and drink to every guest experience.

  • A man with a beard, glasses, and tattoos on his arm, wearing a plaid shirt and a black cap, sitting in a winery or brewery with large metal fermentation tanks in the background, holding a glass of white wine.

    Nathan Kendall

    FOUNDER

Nathan Kendall is a winemaker, entrepreneur, and proud believer in the future of his hometown. The same philosophy that guides his winemaking—thoughtful, intentional, and focused on quality—drives his passion for Proof.

Nathan sees Proof as more than a coffee shop and wine bar. It’s an investment in the community he calls home and an opportunity to be part of Dundee’s resurgence. By creating a welcoming space for locals and visitors alike, he hopes to help bring new energy, connection, and possibility to downtown.
